UNIVERSAL CITY, California — Early into her set, Mariah Carey smiled widely as she surveyed the packed Gibson Amphitheatre on night one of a two-night stand. "You sound very, very festive," she told the audience. She picked up a glass from a table full of beverages. "This is water — don't get it twisted, please.
